These chocolate covered dates had me singing songs about styling blobs that looked like poop. It takes a certain amount of skill to take a nice picture of chocolate covered dates, and, I don't have it, so you will have to take my word for it, they taste better than they look.

Ingredients

  • 1/2 cup 70% chocolate chips
  • 20 dates - ours are already pitted making this a dream
  • Small handful sprouted nuts of choice, I used hazelnuts in some, and pecans in others
  • Flaked salt, smoked salt, (if available, it's not necessary), sesame seeds

Directions

Prep a tray with parchment to place the chocolate dates onto.

Put the chocolate to melt in a double boiler stirring occasionally.

There is a fairly large hole at the top of the date that you can squeeze the nuts into, or else just score along one side of the date, place the nut inside the opening and press it over the nut. It doesn't have to be perfect, the chocolate will cover it up.

Remove the chocolate pot from the double boiler. Place on a towel.

Using two forks to avoid mess, place each date in the chocolate, turn it over, lift it up, shake a bit to remove the excess, place on the parchment. repeat until all the dates are covered.

If these is any extra chocolate scrape it onto a section of the parchment and toss some nuts, seeds, dried fruit on it. That's like chocolate bark!

Place the dates/chocolate into the fridge. After about ten minutes remove from the fridge and lightly sprinkle salt, sesame seeds on them.

Return to the fridge until fully set.
