Chocolate covered nut-butter balls
These no-bake delicious chocolate covered nut-butter balls are so simple to make. I have never really used a recipe!
I made this last batch using pistachio nut-butter for about half of them and they were truly fabulous! You can use whatever nut or seed butter suits your fancy.
Blend almond flour in a bowl with your nut-butter of choice along with a touch of sweetener such as maple syrup if wanted. I find them to be delicious without sweetener. You can also add a teaspoon of vanilla extract and a touch of sea salt.
You will want to add just enough nut-butter to make it easy to roll into a ball, then pop them onto a parchment lined tray.
Once the mixture is all rolled into balls, place them in the freezer for a few minutes while you melt your chocolate in a double boiler.
Once the balls are firm enough to hold their shape, roll them around in the chocolate, and place on the parchment lined tray and pop in the freezer to let set for just a couple of minutes at most, then take them out and sprinkle a touch of flaked sea salt and maybe some sesame seeds on them and then put them back in the freezer until firm.
Once fully firm you can put them in a container and store them in the fridge or freezer to snack on. Enjoy.
