Lemon chia almond cookies

These cookies, like so many made with almond flour, are super chewy, moist, and in this case, so nicely lemony! They take minutes to make and the skill level to make are pretty low as well, while the rewards are high in terms of flavour. They are the perfect tea-time cookie.
Ingredients

1 cup almond flour, about 95 grams

Zest of 1 lemon

1 tbsp chia seeds, soaked in 1.5 tbsp water and 1.5 tablespoons lemon juice for 10 mins

1/4 cup cane sugar, 55 grams

1/2 tsp baking powder
Instructions

Preheat oven to 350°F

Line a baking tray with parchment paper if you’d like, I didn’t and they released just fine.

Combine almond flour, sugar, lemon zest, and baking powder in a bowl.

Stir soaked chia seeds into the dry mix until a dough forms.

Form small balls, flatten them slightly, and place on the tray.

Bake 7 minutes, and remove from the oven and flatten with a spatula, and then return to the oven for another 5 minutes until the edges are lightly golden.

Cool on the tray for a few minutes, then transfer to a rack.

These cookies store well in a sealed container on the counter for a few days.
Makes 12 - 15 cookies.
