I've been on a bit of a kick with bars of late, not the kind that you hang out in on Friday nights with peanut shells on the ground and a sticky counter that feels dirtier than a toddlers hands after eating a mango, no I am talking about the kind you make in a tray or loaf pan. That either require a bit of time in the oven or, the freezer. The kind that are chewy, and nutty and oh so good.

Ingredients

  • 50g oat flour - I make my own
  • 100g almond flour
  • 125g smooth peanut butter
  • 3 tbsp maple syrup
  • 2 tbsp coconut oil
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 50g dark chocolate chips

    Chocolate topping
  • 100g dark chocolate
  • 2 tbsp smooth peanut butter
  • salt flakes for topping

Instructions

  1. Mix the oat, almond flour and salt in a bowl, then add in the peanut butter, coconut oil, maple syrup and vanilla. Mix to combine then fold in the chocolate chips. 

  2. Press the mixture into a loaf tin lined with parchment paper. I used a 22×12 cm loaf tin. Refrigerate for 1 hour.

  3. Melt the topping ingredients over a bain-marie or in the microwave, then pour on top and leave to cool for a few minutes. 

  4. Return to the fridge until the chocolate has set.

  5. Slice and enjoy!
  6. These can be stored in the freezer.
