February Recipe Round-Up
There are so many delicious recipes on the web these days that I often find myself ignoring my cookbooks. In fact I hardly ever look at them any more!
If you aren't an Instant Pot lover, these delicious recipes might make you become one. I am a huge fan of both Indian food AND my Instant Pot which we've now had for over 8 years and it's still going strong. This recipe for vegetable biryani I haven't tried but comes highly recommended by a friend who makes it regularly and says you can get by without using the whole spices if you don't have them on hand and that it will STILL taste delicious. These three ingredient almond cookies pictured here are strangely delicious, they are chewy and so simple to make, the first time I made them I didn't bake them quite long enough, the second time I did and they had a nice crunchy edge with a chewy interior. My partner and I loved them, my kid not so much.
I love Ottolenghi's recipes, but often find them complicated and that I don't have all the ingredients, however this lemon almond, semolina cake or loaf(?) adapted here by Alexandra Cooks is simple and delicious.
Head over to our pancake recipe that I posted recently. It's a family favourite that can easily be made into waffles. It's got an almond flour base with the addition of sunflower seeds to add just the right amount of texture that is a favourite of the neighbourhood kids (some of whom are notoriously picky).
This recipe for a pasta sauce that is Alfredo like uses PECANS! There are a few vegan alternatives to use for the parmesan cheese as well.
